Modern Wagashi/ Japanese Confectionery Art with Junichi Mitsubori
The Japan Foundation, Toronto is delighted to host Mr. Junichi Mitsubori on Saturday June 8, 2019, for a special Japanese confectionery art/ wagashi demonstration. In this 40 minute performance, Mr. Mitsubori will demonstrate the crafting of some exquisite nerikiri wagashi pieces. Speciality tools will be used in addition to some free-hand crafting, to turn pieces of pliable and colourful nerikiri dough into artistic craft. Q and A to follow.
Junichi Mitsubori is a third-generation wagashi artisan hailing from Yokosuka City, Kanagawa. He founded his own school of wagashi, Ichika-ryu of Kadō, which uses bespoke utensils, calculated gestures, lighting and music to produce a highly stylized wagashi experience. Mr. Mitsubori’s delicate yet dynamic wagashi and his style of presentation has spread awareness of wagashi to an international audience.
